Rice 4 cups
or 1 kg
Sugar 4 cups
or 1 kg
Ghee 1 cup
Water 1 cup
Cardamom 6
Cloves 6
Salt
1 teaspoon
Food color (orange or yellow) 2 tablespoon or as needed
Soak rice for ½ hour.
In a large pot boil water for rice.(cover ½ pot with water)
Add cloves and salt.
When water starts to boil add soaked rice and food color.
Cook it rice is fully done, now strain the rice.
In a same large pot add oil and cardamom.
Now add sugar and 1 cup of water.
Cook till sugar dissolves.
Now gradually add rice and mix well.
Make sure all the sugar syrup covers the rice.
When water becomes dry.
Cover the pot with the lid and cook on very low flame until all
the rice becomes dry (put them on dam).
When rice is dry and stream occurs garnish the zarda and
serve.
